No buffet line, no chafing dish, no passed plates. Guests stand at the bar, ask for what they want, and watch it get made. Nobody sits down.
We bring the chefs, too. Every one is trained by Chef Ngoc Le, who has spent more than 35 years behind a sushi bar.

Pull the tab. The nori snaps.
Then cool fish, warm rice and a brush of house nikiri, all in one bite. That's a hand roll the way a sushi bar serves it, and it doesn't survive a car ride.
Nori goes soft the moment it meets warm rice, and a tray of sushi has been sitting on it since the morning. Ours is wrapped the second it leaves the chef's hand, and you are the one who opens it.
