How The Event Works

What your space needs to host the bar.

  • A flat, dry area roughly 12 × 6 ft, with no stairs to reach it
  • Two standard 120v outlets nearby
  • Lighting for evening events, and cover if there's any chance of rain
  • We arrive 30–60 min early; live service runs up to 2 hours

How much food should I order?
For most events, we recommend 3–4 hand rolls or yakimono per guest. Every event's a little different, but this range keeps the line moving and everyone fed across the full 2-hour live service.
What's the catering minimum?
All bookings require a 200-item minimum, which covers 2 hours of live service.
How far in advance do I need to book?
We need at least 14 days' lead time. Sooner is always better, especially for weekend dates.
What area do you serve?
Anywhere within 50 miles of Chantilly, VA, at $3/mile for travel beyond the base fee.
When do you arrive to set up?
Our chefs arrive 30–60 min before your requested service time — tables, linens, plates, and all three signature sauces built out and ready before your first guest shows up.
What is yakimono?
Premium proteins prepped in advance and finished live — torch-seared to order and handed over warm, temaki-style, same as the hand rolls.
Do you have vegan options?
Yes — look for the Vegan tag on the menu. A few hand rolls and yakimono are built vegan from the start, not just a substitution.
Who's the chef?
Chef Alex Le, who has over 30 years of experience as a sushi chef. He curates every roll on the menu and personally trains the team that runs the bar at your event.
What if there's food left at the end of service?
Anything remaining gets packaged up for you to enjoy, refrigerated, within a few days. If everything's served before the 2-hour window is up, service simply wraps early.
What's the deposit?
A $750 deposit holds your date (40% for orders over $2,999). The remaining balance is due by the end of service.
Can I modify my order later?
Yes, as long as the item minimum still holds. Reach out as early as you can — we'll always try to accommodate last-minute changes.
Can you provide a Certificate of Insurance (COI)?
Yes, on request after your deposit is in. Note that once a COI is issued, that deposit becomes non-refundable — the coverage is purchased specifically for your event.
Do you offer tastings?
Not at this time — we operate exclusively as live event catering, not a standalone kitchen. Follow along on social for any future pop-ups.
