The terms you agree to when you book Temaki Live — what we owe you, what we need from you, and what happens if a date has to change.

These terms apply to every booking with Temaki Live LLC, of Herndon, VA. Placing a deposit means you accept them. They are meant to be read once, understood, and not argued about later.

What we provide

A live hand roll bar at your location: the counter, the chefs, the fish, the serviceware, the sauces, and the setup and teardown around it. A standard event is two chefs and up to two hours of continuous service, with the crew arriving 30 to 60 minutes beforehand. Everything is made to order in front of your guests; nothing is prepared in advance and delivered.

Booking, deposits and payment

  • Dates need at least 7 days' notice (14 in NYC, NJ & Philly). We will take a shorter turnaround when we can, but we cannot promise one.
  • A deposit holds your date. Nothing is reserved until it clears, and dates are held in the order deposits arrive.
  • The balance is due by the end of service. The quote you accept is the quote you pay — we do not add line items afterwards.
  • A 18% service fee is part of your quote. It is not a tip; it pays the crew who set up, roll and pack down. A tip is never expected, and if you add one it goes to the team in full.
  • Minimums: 150 items for a full event, 100 rolls for a corporate lunch. Orders can change either way while they stay above the minimum, and earlier is easier than later.
  • Travel beyond 50 driving miles of our Herndon, VA kitchen, or 70 of our Sayreville, NJ kitchen, is charged at $3 a mile. Sales tax is applied as the event's jurisdiction requires.

Changing or cancelling

Plans change, and we would rather move a date than lose it. Tell us as early as you can:

  • More than 14 days before the event: the deposit is fully refundable, or it moves to a new date at no cost.
  • Within 14 days: the deposit is not refundable, because the fish is ordered and the crew is booked. It can still be moved once to another date within six months, subject to availability.
  • Within 48 hours: the full quoted amount is due, whether or not the event goes ahead.
  • Once we have issued a Certificate of Insurance for your event, the deposit is non-refundable at any point, because the coverage is bought for your specific date.
  • If we cancel — which we have not had to do — you get everything you have paid back in full.

Weather, a venue closing, a power cut, an illness in the crew: we will always try to move rather than cancel, and we will not keep money for an event that neither side could hold.

What we need from your space

A flat, dry area of roughly 12 × 6 feet reachable without stairs, two standard 120v outlets nearby, cover if rain is possible, and light for an evening event. If the space turns out not to meet this on the day, we will do what we can, but we cannot guarantee full service and the booking still stands.

Torch-searing is optional. Tell us if your venue does not allow an open flame and we will skip it; nothing else about the service changes.

Food, allergies and leftovers

We serve raw fish. Consuming raw or undercooked seafood increases your risk of foodborne illness, particularly if you are pregnant, elderly, very young or immunocompromised — this is the standard warning and it is a real one.

Tell us about allergies when you book and again at the counter. We work in a small mobile space where fish, shellfish, sesame, soy and gluten are all present, so we can take care but we cannot promise an allergen-free environment. Anything left at the end of service is yours; keep it cold and eat it within a couple of days. Once it leaves our counter it is out of our hands.

Insurance and liability

We are a licensed and insured catering operation, and a Certificate of Insurance naming your venue is available on request once your deposit is in. Our liability for any booking is limited to what you paid us for it. Nothing in these terms limits liability for death or personal injury caused by our negligence, or for anything else the law does not allow us to limit.

Photography

We often photograph our own counter and food at events, and we sometimes use those pictures on this site and on social media. Tell us at any point — before, during or after — that you would rather we did not, and we will not; if something is already published, we will take it down.

Your account

If you create an account to manage a booking, keep your password to yourself and tell us if you think someone else has it. You are responsible for what happens under your login until you do.

The rest

These terms are governed by the law of the Commonwealth of Virginia. If a court finds one clause unenforceable, the rest still stand. We may update these terms; the version that applies to your booking is the one published when you paid your deposit, and the date at the top of this page tells you when it last changed.
