For two days in October we're setting up our hand-roll bar inside Soricha, the Korean tea house on Columbia Pike. Sushi chefs, rolling live, a few steps from your table.

It happens on Saturday, October 24 and Sunday, October 25, from 11:30 am to 10 pm. There is no reservation and no ticket. You walk in, sit down, and order.

Why Soricha

If you know Annandale, you know Soricha. It is one of the town's favorite rooms: real Korean tea, blended in house, traditional music on the stage, and the kind of calm that makes people stay for a second pot. It fills up on weekends for a reason.

A hand roll and a pot of tea turn out to want the same thing: to be made properly, one at a time, and enjoyed straight away. So when Soricha said yes, it felt less like a pop-up and more like two neighbors sharing a table.

What a live hand-roll bar is

A hand roll is sushi at its simplest: warm rice, cool fish and a sheet of crisp nori, rolled into a cone and eaten with your hands. The catch is time. Warm rice softens nori within minutes, which is why a hand roll that has been sitting is never as good as one that was just made.

So we don't make any ahead. Our chefs roll each one the moment you order it, in front of you, and it comes to your table while the rice is still warm and the nori still snaps.

The menu runs from the rolls everyone knows to the ones worth dressing up for: spicy tuna, salmon and ikura, torched unagi, and then toro and uni. It is a short menu, and a little luxurious on purpose.

How it works on the day

  • Walk in any time between 11:30 am and 10 pm. No reservation.
  • Sit down and scan the card on your table to order and pay from your phone, or come up to the bar and watch.
  • We bring each roll over as it is made.
  • Order tea from Soricha the way you always would. We don't sell drinks; theirs are the reason to stay.
